What We Ate Last Night (Mediterranean Quinoa Bowls)
I am waiting for that second trimester boost of energy (will it ever come? I’m starting to worry.). Family meals are happening, new and exciting recipe development is not. So I thought, why not share what we are eating? You will either feel inspired by something you haven’t tried, or you will get a self esteem boost. Either way, I am happy to oblige.
Yesterday we ate a poor man’s version of Pinch of Yum’s Mediterranean Quinoa bowls. I highly recommend this recipe. The roasted red pepper sauce in this recipe is where it is at. It is wonderful. Wonderful.
Mediterranean Quinoa Bowls is a great family meal. It’s a bowl of quinoa covered with all your favorite toppings, hummus, and that wonderful roasted red pepper sauce. Last night I didn’t have almonds for the sauce so we just used the roasted red peppers as a topping. I didn’t have any hummus, so we used tahini in its place. We had avocados, but I forgot to put them out, so we skipped those. I randomly pulled out some ground beef to thaw in the morning (not knowing what I was going to make for dinner) so we cooked that up as a topping as well.
What’s my point? You can do whatever you want with this dinner! Make it meatless or make it meatfull. Get allll the toppings or just use what you have. If you want to try it, grab some quinoa next time you are at the store, some feta, red peppers, maybe avocado and cucumbers, really, just get whatever you want!
I love this as a family meal because the kids get really excited about choosing their own toppings. My pickiest eater even tried olives yesterday because he was allowed to pick what he wanted. Mostly all he wanted was feta cheese though . . .
